Abstract. The study evaluated the composition and functional properties of chitosan from the shells of two species of periwinkle L. punctata and N. chitosan samples from both species had a moisture content of 7–8%, ash 86–87% and crude fibre of 4%.

A periwinkle fishery developed in some areas of Canada (, Nova Scotia, New Brunswick) and New England (Maine) after the species attained high abundances in the twentieth century. Recent periwinkle harvests from both Canada and Maine are taken to Boston and sold from there to markets in Asia, Europe and the United States (Daigle and Dow, 2000).

Periwinkle shell was obtained from Ihiagwa Market after the edible portion had been harvested. The shells were soaked in water for one week to thoroughly remove impurities. They were dried, ground and sieved to three particle sizes of 150, 300 and 425 μm. The chemical composition of the periwinkle shell is as shown in Table 1.
